Some call it the short way round. We think it is where everything is decided, and that is where we went to work.

In the tank a second fermentation can be governed as it cannot be anywhere else: calibrated timings, controlled temperatures, selected yeasts working slowly. The aromatic profile is built by slowness, not by pressure.
